2 eggs, optional
1 tbsp sesame oil (substitute olive oil)
1 clove garlic, minced
1 bag frozen mixed vegetables, thawed (I like carrots, peas, corn)
1 bag riced cauliflower or cauliflower mix
1/3 cup low sodium vegetable broth
2 tbsp coconut aminos (substitute soy sauce)
Optional toppings – scallions, chopped nuts, diced avocado
If you are using eggs, crack eggs into small bowl and scramble. Add to large pan and heat on medium-high, cook, scrambling, until done. Remove from pan and set aside. Wipe out pan. Add sesame oil, heating until glimmering, add garlic and cook 1 minute or until fragrant. Add thawed mixed vegetables, and eggs, cook until tender 1-2 minutes. Add riced cauliflower, vegetable broth and coconut aminos. Cook 2-3 minutes, until liquid is absorbed.
What I love about this recipe – it is easy, simple ingredients, cost effective, and easily adapted. For this recipe, I utilized what I had on hand (frozen mixed veg), however, you could use any combination of mixed vegetables you like. Recipe can be made with, or without eggs, and most other ingredients have substitutions. The best part, is adding your own flare at the end, adding scallions, chopped nuts or avocado to give it a little extra sparkle. Enjoy!
