Whole Wheat Apple Nut Muffins

Makes approximately 15 muffins.


Dry ingredients

2 cups whole wheat flour

1 tsp. baking soda

1 tsp. baking powder

2 tsp. ground cinnamon

½ tsp. all-spice

½ tsp. salt

½ cup roughly chopped nuts

Wet ingredients

3 large eggs

1/3 cup pure maple syrup

1/3 cup melted coconut oil (substitute alternative oil)

1/3 cup unsweetened apple sauce

1 ½ tsp. pure vanilla extract


2 cups grated apple (about 2 apples)



Preheat oven to 425 degrees. Spray muffin tin with non-stick spray or fill with liners. In a large bowl combine all dry ingredients. In medium bowl whisk together all wet ingredients. Add wet ingredients into dry ingredients, stir well, or until all four pockets are gone. Lastly, stir in grated apple. Spoon batter into muffin tin, filling ¾ of the way. Bake at 425 for 5 minutes, keeping muffins in oven, reduce heat to 350 degrees and bake additional 18-20 minutes or until insert toothpick and comes out clean.
