1/3-1/2 cup smooth peanut butter
2-3 ripe bananas
½ cup dark chocolate chips
2 tsp coconut oil
Peel and slice bananas about ¼ inch thick. Line a baking sheet with parchment paper. Place about 1 tsp peanut butter on a banana slice, top with a second slice to make a banana PB sandwich. Place on parchment paper. Repeat until all slices are in a sandwich.
TIP: to make dipping process easier, poke a toothpick into each sandwich once it is placed on the baking pan.
Place pan in freezer for about an hour or until hard. Once sandwiches are frozen, melt chocolate and coconut oil in microwave safe bowl, 30 seconds at a time, stirring between. Once chocolate is melted, remove sandwiches from the freezer. Dip ½ of the banana sandwich into the chocolate and place back on baking pan – REMOVE TOOTHPICK. Repeat with all sandwiches. Place pan back in the freezer for 20-30 minutes or until the chocolate sets. Once chocolate has set, enjoy snacks as a sweet treat alternative! Store in an airtight container in the freezer
