Zucchini Noodles with Peanut Sauce

¼ cup smooth peanut butter

1 tbsp. sesame oil

1 tbsp. rice vinegar

1 tbsp. tamari or low sodium soy sauce

1 tsp. fresh grated ginger

~1/4 cup water

4 cups spiralized zucchini

Optional: lime juice, cilantro, chopped peanuts, julienne carrots



Combine all ingredients from peanut butter through ginger in a small bowl. Slowly add in 1/4 cup water, while mixing sauce, until desired consistency is reached. Add sauce to noodles, stir and eat! Option to add a squeeze of lime juice, top with cilantro and chopped peanuts. 


To make this meal a bit more filling add julienne carrots, tofu or alternative protein source.
